Pet of the Month

Basil

This is Darin & Lisa’s great dane, Basil – all 100 crazy pounds of her. Some of you may have even had the chance to meet her in the office when she was about a third of the size she is now. She’s usually up to no good doing what she thinks is playing with (some would call it harassing) their little jack russel, Otto, but then she turns into a gentle giant when she’s with the grandkids. This girl has a personality that matches her size, and yes – she is a total daddy’s girl.

Fall is one of my favorite times of the year. The produce that you can find at your local farmers market is full of color, hearty root vegetables and, of course, pumpkins. Some of our family’s favorite fall recipes include butternut squash soup, pumpkin donuts, apple pie, and dishes made with low-and-slow braised meats.

This recipe for a healthier Coq Au Vin ticks all of boxes of warm autumn flavors and smells, and it’s especially a great recipe for those of you that have an Instant Pot or a crockpot. Don’t let the fancy name scare you away – this perfect-for-fall recipe is actually quite easy to make (I’m pretty sure my hubby could even pull this one off!). Oh, and don’t forget to pair it with some creamy mashed potatoes, crusty bread, and your favorite red wine.
